This was adopted from a recipe in Southern Living magazine. I don’t subscribe to the magazine, but I did read it one day in the waiting room while my car was being inspected. This dish is ridiculously easy to put together and makes for a great last-minute potluck dish.
Ingredients:
- 1/2 pound of shrimp, peeled – season with paprika, cumin, S&P, and lemon juice
- 1 can of kernel corn, drained
- 6-7 stalks of okra (chopped)
- 1/2 onion (chopped)
- 1/2 link of smoked sausage (chopped)
- cherry tomatoes, halved
- lemon juice
- S&P
Sautee the shrimp until cooked. Pour into bowl and set aside. Sautee the onions and okra until soft, add the smoked sausage. Pour into bowl and combine with rest of ingredients. Garnish with cilantro (optional).
